Hot Golden Delight

This is a super easy recipe to make and will make a potent edible that you can adjust the potency on with ease. I also found that this particular medible effect can be felt quicker than most medibles. I suspect that this is due to it being a drink and getting digested faster.

What you will need:

2 1/2 cups Coconut Milk
3 Tb Local Honey
1 1/2 tsp Curry Powder
1/2 tsp Ground Turmeric
1/4 tsp Ground Cinnamon
2 tsp Cannabis Infused Butter

Mix all ingredient except Cannabis infused butter in blender.

Pour blended ingredient into saucepan and simmer for 5-7 minutes then pour into 2 coffee cups add 1 tsp Cannabis butter into each serve immediately.

A few notes on this recipe. To increase of decrease dose add or subtract canna-butter as needed. I use 2 tsp per serving.  (Start at 1 tsp per serving and adjust from there.) It should also be mentioned that “coconut milk, cinnamon, honey, and turmeric contain powerful antioxidants”.(HERB) Also if you use local honey instead of generic honey it contains local pollen processed by the bees to aid in allergies to pollen as well.

Cannabis Spinach & Artichoke Dip

If you have always wanted an infused cannabis food that was not dessert or sweet then this might be your answer.

This recipe I found in Herb: Mastering the Art of Cooking with Cannabis, However I did make a few changes to the recipe.

Ingredients needed:

  • 1/4 cup Cannabis Infused Coconut-oil
  • 1 TB Chopped Garlic
  • 8 oz Cream Cheese (softened)
  • 1 1/4 cups Parmesan cheese ( 1/4 of that set aside for topping)
  • 2/3 cup Sour Cream
  • 1/4 cup Mayo
  • 2 TB Chopped Jalapenos
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1 cup of Cannabis Fan leaf Fingers (cut each finger off each leaves off discard steams)
    • Replace Cannabis fan leaf fingers with Kale or Spinach if unable to acquire fan leaves.
  • 1 cup frozen thawed and drained Spinach. (next time I make this I’m going to try with fresh spinach)
  • 1/4 Cup Chopped Canned Artichoke-hearts
  • Pinch of Nutmeg
  • 1/4 cup Bread Crumbs

Pre Heat oven to 325F degrees.

While the oven preheats melt cannabis coconut oil on low heat in a sauces pan. Add Garlic and cook for two minutes.Remove from heat and set aside.

In a large mixing bowl Blend together Mayo, Cream Cheese, Sour Cream, 1 cup Parmesan cheese,  artichokes, spinach, Jalapenos, salt, pepper and nutmeg. Once well blended add in Spinach and Cannabis Fan leaf fingers. Mix well then add in the cannabis coconut oil and garlic you set aside. Bend for 1-3 minutes.

Pour into a 1.5 pint bread glass bread pan.

In a separate bowl mix together the remaining 1/4 cup Parmesan cheese and bread crumbs. Then top the dip with it.

Cook for 20-30 Minutes or until golden brown.
(optional: Broil top for 2 minutes to crisp top)

This recipe makes 4 cups. The recommended serving size is 1/3 cup. Although I found that I needed to eat 2/3 cups to equal one of my cookies. That becomes a meal. So this recipe is nice for an occasional change up in medibles but not practical for everyday medication. None medical users might get more out of this recipe due to most non medical users having lower tolerances than your typical weekend users.

Infusing Cannabis into Oil or Butter

I personally prefer coconut oil. Why coconut oil? That answer is simple. Coconut oil is 100% fat, whereas butter is around 60% and even clarified butter is only 80% and cannabinoids bond to fat. Therefor coconut oil will have more cannabinoids per serving that using butter and many other oils. I should also note that coconut oil will work in any recipe that requires butter or an oil so it is extremely versatile and coconut oil contains healthier fats.

The method I use to infuse coconut oil can also be used to infuse butter or other oils as well. Having a oil or butter to use in the kitchen is the first essential step to cooking with cannabis.

To infuse cannabis into the fat of your choosing you will need the following items.

  1. Crock pot
  2. Large Mixing Bowl
  3. Strainer
  4. Cheese Cloth
  5. Zip tie
  6. 16oz of coconut oil (butter or other oil)
  7. 1oz decarboxylated cannabis buds (or 4oz of cannabis trim)
  8. 1 cup of water

Set the crock pot to keep warm. Add the cup of water and coconut oil into your crock pot and let it all melt. Then add in the decarbed cannabis.

Important, for best result I emphases the cannabis must be decarbed before adding it to the oil or butter to activate the THC.

Mix the cannabis in the oil or butter every few hours keeping the crock pot on keep warm the entire time. Let this mix sit in the crock pot at least 8 hours but can keep it going longer up to around 14 hours to increase maximum potency.

Turn off the crock pot and let it cool for about 30-60 mins. In the meantime, line the strainer with several layers of cheese cloth (6-10 layers) and set the cheese cloth lined strainer in the large mixing bowl. Once your oil or butter has cooled it is time to pour it through the cheese cloth. Lift the strainer and let most of the oil or butter has gone into the bowl. Grab the cheese cloth and make sure all the cannabis is trapped inside and zip tie the cannabis inside the cheese cloth.  With all the cannabis trapped inside the cheese cloth and if the cannabis has cooled enough you can squeeze out the rest of the trapped oil or butter. You can keep this used cannabis and use if for making a less potent batch of oil or butter. I recommend making an 8oz batch of oil or butter with the left over cannabis. Or you can make a cannabis salve like in my article Topical Cannabis Salve replacing the trim in that recipe with this leftover cannabis.

Use caution and make sure that the cannabis is cool enough to squeeze or hot oil will burn you. If in doubt set aside the cannabis in the cheese cloth to cool in a separate bowl before squeezing.

Inside the mixing bowl should be the cannabis infused oil or butter still mixed with water. If any cannabis is still in the oil; clean the strainer line with cheese cloth and strain one more time. If clear of cannabis debris set the bowl in the refrigerator overnight. This colder temperature will help with the oil or fatty butter to separate from the water because the oil and fat float to the top of the water and become a solid in colder temperatures.

Once the oil or butter is solid then use a butter knife to slide along the side of the solid oil or butter and pop the free carefully. Discard the water and scrape the bottom of the oil or butter to get the rid of the film. What remains is your infused oil or butter.

If making cannabis coconut oil, I recommend adding one more step to this process. Put the infused coconut oil back into a cleaned crock pot and let it melt on keep warm. Once fully melted pour the coconut oil into ice cube trays. (These ice cube trays should only be used for this purpose after this) Then freeze the oil over night. Once you have your ice cubed infused coconut oil put into a Tupperware or into the empty coconut oil container. This just makes handling coconut oil easier. I just weigh out or melt what I need when I need it.

Marbled Dark Chocolate Peanut-butter Medible Cookies

Let’s ditch these pre-made box cookie packages. Simply enough the box cookies don’t allow you to add enough medicine. Take for example peanut butter cookies. One box I have asks for 3 Tablespoons of oil. So you add 3 tbs of infused oil and you get easy medibles. But ones that are not super effective.

Here I will layout an easy peanut-butter cookie recipe. This recipe will require 1 cup  and 1 tablespoon of coconut oil. Each cup has 16 tablespoons in it. Now can you see where the benefit to a little extra work can payoff.

Recipe

1 cup cannabis infused coconut oil
1 tablespoon cannabis infused coconut oil
–melted with 1/4 cup dark chocolate chips
1 cup Organic peanut butter
1 cup white sugar
1 cup packed brown sugar
2 1/2 cup all purpose flower
2 Eggs
1 1/2 teaspoons of baking soda
1 teaspoon backing powder
1/2 teaspoon baking powder

Using a bender mix infused coconut oil (1 cup) with sugars and eggs.

Then mix in the flower with baking soda and baking powder.

Using a double bowl method melt coconut oil (1 tablespoon) with 1/4 cup of dark chocolate chips. Once fully melted mix into dough and allow dough to set in the fridge for 60 mins.

For dosing and consistency in size use a tablespoon to make your peanut-butter dough balls. Then use a fork to make the crisscross pattern. Use parchment paper on your cookie sheet to prevent sticking.

Cook at 350 F for 10-12 mins and let cool on cookie sheet.

Cannabis Bundt Cake

Things are a little crazy right now. Finals are approaching and I have been incredibly focused on my research paper. However that does not mean that I am going to leave you without something cannabis related. I have made a new cannabis dish.

This one is super easy to make. Get your favorite cake mix or use the French vanilla flavor like I did. Follow the directions on the box for bunt cake except substitute butter for cannabis coconut oil or infused butter.

To make this cake even better you need to make your own frosting and of course infuse it with cannabis.

1/3 cup of Cannabis infused butter or oil

4 ½ cups conventioneers sugar

1 ½ TSP of vanilla extract

In a bowl beat butter or margarine until fluffy. Gradually add 2 cups of the confectioners’ sugar, beating well.

Slowly beat in the milk and vanilla. Slowly beat in remaining sugar. Beat in additional milk, if needed, to make of spreading consistency.

After your cake cools add frosting and ta-da you have your own cannabis infused cake. I do warn that the cake is very hard to get an accurate dose out of but is absolutely delicious.

Mega Medible: Double Infused Double Chocolate Canna-Cookies

There are time when my normal medibles are not powerful enough to take care of all my pain when I am having a extra painful day and I need extra pain relief. There are a few ways to help when this happens. You can take an extra dose but…

This got me thinking why take two when you could still just take one. There are a few ways to make a more powerful medible. First would be to make a more powerful cannabis oil or butter. Or you can make a Mega Medible. A Mega Medible is when more than one ingredient in what you are making is infused with cannabis.

This recipe is very easy and you will not need a lot of ingredients for it because I used a Betty Crocker pre-made cookie mix to make it easier on most people. I will be doing a completely from scratch cookie recipe on a latter date.

What you need and what you need to modify:

One box of Betty Crocker chocolate chip cookie mix.

The box calls for one stick of butter so what we need to do is replace the stick of butter with something infused with cannabis. I always infuse into coconut oil, however. if you have canna-butter that will work too. Use 4 ounces of canna-oil or butter by weight. Then to make this a double infusion we need to add some more cannabis into the recipe. I chopped up ten of my cannabis infused chocolates about 1/2 a cup and added it into the mix. The box also calls for egg. Follow the cooking instructions on the box.

make a dozen IMG_20150719_072616021and freeze the rest. I do this because if the cookies go stale the cannabinods will be less effective and lets be honest a fresher cookie is always better!

Cannabis Drink: Bhang Ki Thandai

Cannabis also called Bhang in India has been part of human history for a very long time. It has been used for religious purposes along with medical uses for many thousands of  years. In India during the festival of Colors called Holi it is costum to consume Bhang drinks because of cannabis (Bhang) is associated with the Hindu Lord Shiva. According to the official Holi Festival website www.holifestival.org, “bhang is believed to cure fever, dysentery, sunstroke, to clear phlegm, aid in digestion, appetite, cure speech imperfections and lisping, and give alertness to the body.” Drinking Bhang responsibly was even said to aid one in avoiding going to hell in the after life.

What you will need to make a small batch of modified recipe of Bhang Ki Thandai:

Mortar and Pestle
Whole Milk
0.3 ounce of  ground Cannabis trim
1 tsp Decarboxated Kief (Added in Keif to increase potency since trim was used instead of flowers)1 cup Water
1 Tbs of Blanched Almonds (How to Blanch Almonds)
Pinch of ground Ginger
Pinch of ground Cloves
Pinch of ground Cinnamon

Some mason jars will help as well.
(Note original recipe for this would also call for some rosewater and cardamon. I did not have on hand and these ingredients might have a significance in a symbolic way that I am unaware of and meant no disrespect by modifying it.)

How to Prepare Bhang Ki Thandai:

Boil 1 cup of water. Get it to a rapid boil then add in your cannabis (bhang) and remove from heat and cover. Let the cannabis steep in the boiling hot water for 7 minutes. Place cheese cloth over a large bowl to strain water away from cannabis. Squeeze as much of the water out as you can into the bowl. IMPORTANT keep this water you boiled the cannabis in you will need it latter.

IMG_20150620_101018833Put the cannabis into your mortar. At this point add in the decarbed kief. Then add in 2-4 Tbs of milk to the cannabis and use the pestle to slowly but firmly grind the cannabis and milk together. After a few minutes squeeze out as much milk as you can by pressing the pulpy mass of cannabis ageist the side of your mortar. Collect this green milk in a separate bowl. (Don’t worry if there is bits of cannabis floating in the milk) Repeat this until you have used 1/2 cup of milk.

Once half your milk is used add in the blanched Almonds. Grind up the almonds into your cannabis mush. Then repeat the process of add milk into the mix–squeezing out the milk and repeating until all the milk is used.

Using a large mason jar place some cheese cloth over the top and secure it with the lid ring.
(A little tip here is before securing the cheese cloth to the jar with the lid ring make the cheese cloth dip into the jar some. This will allow a bit of the liquid to accumulate without spilling.)

Strain milk through the cheese cloth on the jar. Clear away ground cannabis as you are straining to assist in straining speed. Take your time and do not rush however. Milk slowly strains through the cheese cloth.

Once you have your strained milk in your jar. Add in Pinch of ground Ginger, ground Cloves and Cinnamon. Add in the water your steeped the cannabis in. Put the lead on the jar shake well to mix. (The rosewater and sugar would be add at this point. 1/4 tsp rosewater and 1/4 cup sugar. But my first batch I wanted to make without sugar. But I am considering adding a little honey to the next batch maybe 1/8 a cup) Then Chill the drink before drinking.

At this point I divided the Bhang Ki Thandai into 3 small mason jars to store a doses.
